Why they work together
This truffle is made with Shiraz Viognier, so it meets the wine on its own terms rather than fighting it. The raspberry lifts the darker blackberry and plum in the glass, while the cocoa butter softens the tannin and lets the pepper and savoury spice come forward. Take a small bite, then a slow sip — the finish lasts noticeably longer than either does alone.
