Why they work together
Old-vine McLaren Vale Grenache leads with cherry and red liquorice, and the Morello cherry in this truffle lands squarely on it. Because Grenache carries less tannin than a Shiraz or Cabernet, it needs a lighter chocolate — this one stays bright rather than heavy, and the cinnamon and clove in the glass pick up the warmth in the ganache.
